First Generation Iphone To A 3gs What Information Will Transfer During The Syncing Process

Im getting ready to go pick up my new iPhone today.... i was thinking that the apple store would do the information transfer for me but i found out its an at home process. When i go about syncing my old iPhone information to my new one will everything transfer over like old SMS conversations, pictures, website history? thank you.
